2 , cored, peeled and cut into rings 1/2 inch [1 cm.] thick
Fresh lemon juice
Melt the butter and in it saute the goose livers until lightly browned.
Drain the butter, which will now be mixed with fat from the livers, into a small baking dish.
Add the apple rings.
Lay the livers on top of the apple rings and sprinkle them with the sugar and the lemon juice, if using.
Cover the dish and set it in a pan partly filled with hot water.
Bake the livers in a preheated 350° F. [180° C] oven for 30 minutes, or until firm.
