Stuffed Liver Casserole

Ingredients
  Liver slices 1 1⁄2 Pound (About 6 Slices)
  Flour 1 Ounce
For stuffing
  Breadcrumbs 2 Tablespoon
  Finely chopped parsley 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Freshly ground black pepper 1⁄4 Teaspoon
  Onion 1 , peeled, finely chopped
  Grated lemon rind 1⁄4 Teaspoon
  Bacon 8 Ounce, rinded
  Stock 1⁄2 Pint
Directions

Toss the liver in flour.
Mix all the ingredients for the stuffing together, moistening with a little stock.
Spread over the liver, wrap each slice with bacon, place in a casserole and pour over the stock so that the liver is covered.
Bake about 40 minutes or until the liver is tender.
Adjust consistency with beurre manie and taste for seasoning before serving.
