Smothered Liver And Onions
|Onion||1 Large, thinly sliced|
|Beef liver||1 Pound (1/2 Inch Thick)|
|Condensed cream of mushroom soup||10 3⁄4 Ounce (1 Can)|
|Milk/Half-and-half||1⁄4 Cup (4 tbs)|
1. In 12- by 8-inch microwave-safe baking dish, combine butter and onion. Cover with vented plastic wrap; microwave on high 5 minutes or until onion is tender, stirring once during cooking.
2. Cut liver into 4 portions. Arrange liver over onions, placing thicker portions toward edges of dish. In small bowl, stir soup until smooth; stir in milk and pepper. Pour over liver. Cover; microwave on high 10 minutes or until liver is no longer pink in center, rearranging liver twice during cooking. Let stand, covered, 5 minutes.
