Calf's Liver With Apples And Onions

Ingredients
  Lean bacon slice 4
  Unsalted butter 1⁄4 Pound (1/2 Stick)
  Onions 2 Large, sliced thin
  Granny smith apples 3
  White wine vinegar 2 Tablespoon
  Sugar 1 Teaspoon
  Dry white wine 1⁄4 Cup (4 tbs)
  Calfs liver 1 1⁄2 Pound, sliced 1/3 inch thick and cut into 2- by 1-inch strips
Directions

In a large skillet cook the bacon over moderate heat until it is crisp, transfer it to paper towels to drain, and pour off all but 2 tablespoons of the fat.
To the fat remaining in the skillet add 2 tablespoons of the butter and cook the onions in the fat
