Ingredients
  Beef liver 2⁄3 Pound
  Dry sherry 1 Tablespoon
  Baking soda 1⁄2 Teaspoon
  Soy sauce 1 Tablespoon
  Sugar 1⁄4 Teaspoon
  Cornstarch 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Sesame oil 1 Tablespoon
  Egg white 1
  Oyster sauce 3 Tablespoon
  Water 1⁄2 Cup (8 tbs)
  Chicken broth 3 Tablespoon
  Salt 1⁄4 Teaspoon
  Vegetable oil 1 Cup (16 tbs)
  Garlic 1 Tablespoon, sliced
  Celery 1 Cup (16 tbs), sliced
  Mushrooms 1 Cup (16 tbs), sliced (fresh)
  Carrots 2 , cooked, sliced
Directions

Use a cleaver to cut liver into thin slices.
Combine marinade ingredients in a medium bowl.
Add liver slices; mix well.
Let stand 20 minutes.
Combine ingredients for seasoning sauce in a small bowl.
Mix well and set aside.
Heat oil in a wok over medium heat 1 minute.
Stir-fry garlic and marinated liver 2 minutes.
Remove with a slotted spoon, draining well over wok; set aside.
Remove oil from wok except 1/4 cup.
Heat oil remaining in wok over high heat 30 seconds.
Stir-fry celery and mushrooms 2 minutes.
Add carrots and seasoning sauce.
Stir-fry until sauce thickens slightly.
Add cooked liver; mix well.
