Calves Liver With Sweet Basil And Wine
|Bacon slices||16 , fried (For Garnish)|
|Flour||1⁄2 Cup (8 tbs)|
|Orange||1 , peeled and segments separated (For Garnish)|
|Parsley||1 Tablespoon (For Garnish)|
|Red wine||1⁄2 Cup (8 tbs)|
|Onion||1 Small, chopped|
|Calves liver slices||8 (Thin)|
1 Dip the livers in flour to coat evenly.
2 In a frying pan, heat the butter until foaming.
3 Add the coated liver and sauté lightly.
4 Add in the chopped onion and cook briefly.
5 Season with salt, pepper, and ½ tsp basil.
6 Gradually, pour in the wine, stirring up the brown particles from the bottom of the pan.
7 Allow to cook briefly, on low heat until the flavors blend
8 Serve on a bed of noodles.
9 Garnish with chopped parsley, orange slices or crisp bacon.
