Fresh Fennel Blossom Liqueur

In this episode, Chef Andrew Lanier creates a simple fennel blossom liqueur. Wonderfully aromatic, homemade fennel liqueur is easy to make and a less complex substitute for absinthe. A squeeze from a fat lemon garnish adds a bit of complexity and balance to a refreshing libation.
Ingredients
  Premium vodka 750 Milliliter (1 bottle)
  Fennel flower 4 Ounce (fennel blossoms)
  Sugar 1⁄2 Cup (8 tbs)
Directions

MAKING
1. Fill a glass bottle with fresh fennel blossoms to the brim.
2. Add sugar, and pour in the vodka. Put on the lid, and give it a light shake.
3. Place the bottle into a circulator for 1 1/2 hour.
4. Open the bottle and strain the liquid into a clean container.

FINALIZING
5. Take a bourbon glass, add ice to it and pour the fennel liqueur.
6. Give it a quick stir, spray a zest of lemon over the glass.

SERVING
7. Serve cold.
