Fresh Lime Filling
|Sugar||1 Cup (16 tbs)|
|Butter/Margarine||1⁄2 Cup (8 tbs), cut in pieces|
In top of double boiler, beat eggs and egg yolk slightly; add sugar, butter or margarine and lime juice.
Cook over simmering water, stirring frequently, 20Ã¢â‚¬â€25 minutes until thick and smooth.
Use as filling for 2 cake layers or as topping on individual sponge rounds.
