Eggless Lime Cake

Decadent dessert to enjoy any day!

Ingredients

Cake flour/1 cup all purpose flour + 1 tbsp of cornstarch and 1 tsp of baking soda 3 Cup (48 tbs)
Unsalted butter 1 Cup (16 tbs) (((approx. 2 sticks)))
Sugar 2 Cup (32 tbs) , granulated
Egg replacer 8 Teaspoon (((Ener
Baking powder 3 Teaspoon
Salt 1/2 Teaspoon
Lime and orange zest 1 Tablespoon
Lime and orange juice 1/4 Cup (4 tbs) (((1 lime + 1/2 an orange)))
Milk 1 1/4 Cup (20 tbs)
Vanilla extract 1/2 Teaspoon

Directions

GETTING READY

1. Preheat the oven to 350 degrees F.

2. Grease a 9 x 13 inch cake pan. Keep aside.

MAKING

3. In an electric mixing bowl, add in the butter and sugar. Blend until the mixture becomes light and fluffy.

4. Add in the lime and orange zest and juice into the blender. Scrape down the sides of the bowl using a spatula and push it to the center. Blend again until the mixture smooth.

5. In another bowl and in all the dry ingredient for the cake such as cake flour, baking powder, salt and mix well.

6. Add in the vanilla extract and ener-G egg replacer mixture. Scrape down the sides of the bowl for any batter and blend well.

7. Slowly pour in the milk and blend the batter simultaneously to incorporate well.

8. Add in 3/4 cup of cake flour mixture at a time into the batter and continue beating.

9. Take the greased pan, pour this batter into it slowly and level it by moving the pan around. Bake this in the preheated oven for about 25 - 30 minutes at 350 degrees F.

10. Once the top of the cake has turned golden brown, remove and check whether the cake has been cooked completely by inserting a toothpick which should come out clean.

11. Once the cake has cooled down, frost and ice the cake as desired.

SERVING

12. Cut the lime cake into desired pieces of slices and serve with tea or coffee.
