Ingredients

  Pepper 1⁄2 Teaspoon, ground (For Sablefish Siciliana)
  Sablefish 1 Pound (For Sablefish Siciliana)
  Rosemary 1 Tablespoon (For Sablefish Siciliana)
  Lemon 3 , wedges (For Sablefish Siciliana)
  Asparagus 1 Pound (For Stir fried Asparagus Medley)
  Red bell pepper 1 (For Stir fried Asparagus Medley)
  Yellow bell pepper 1 (For Stir fried Asparagus Medley)
  Basil leaves 1⁄2 Cup (8 tbs) (For Stir fried Asparagus Medley)
  Red onion 2 Cup (32 tbs), chhoped (For Stir fried Asparagus Medley)
  Grapeseed oil 2 Tablespoon (For Stir fried Asparagus Medley)
  Sea salt 1⁄2 Teaspoon (For Stir fried Asparagus Medley)
  Avocado 1 1⁄2 Cup (24 tbs), pureed (For Lime mousse with strawberries)
  Agave syrup 1⁄2 Cup (8 tbs) (For Lime mousse with strawberries)
  Lime extract 1 Tablespoon (For Lime mousse with strawberries)
  Lime 1 , zest (For Lime mousse with strawberries)
  Eggwhite powder 3⁄4 Cup (12 tbs) (For Lime mousse with strawberries)
  Cream tart 1 Teaspoon (For Lime mousse with strawberries)
  Strawberries 1 Pound (For Lime mousse with strawberries)
  Mint leaves 2 Tablespoon (For Lime mousse with strawberries)
Directions

GETTING READY
1. For sable fish marinating – in a large casserole take white wine and lime juice.
2. Add in garlic, anchovy paste, olive oil, capers, and freshly ground peppers. Whisk well all the ingredients.
3. Add in sablefish in the marinade and rub gently.
4. Keep the fish aside to marinade.
5. Preheat oven on 375 degrees.
6. For Stir fried Asparagus Medley – chop asparagus, red bell pepper, yellow bell pepper, basil leaves and red onions.

MAKING
7. For making Sablefish – chop fresh rosemary and add in marinade. Whisk well.
8. In a small casserole add in marinated sable fish.
9. Pour marinade liquid over fish.
10. Slice lemons into thin wedges and cover sablefish.
11. Place the casseroles over baking sheet and bake in preheated oven for 40 minutes at 375 degrees.
12. For making Lime mousse with strawberries – in a large bowl take avocado puree, agave syrup and lime extract. Whisk well for few minutes.
13. Grate lemon rind into the mixture.
14. Keep avocado mixture aside for some time.
15. In a blending jar take egg white powder and water. Whisk together for few minutes.
16. Pour the egg mixture in a mixing bowl, add in cream tarter and mix well.
17. Half the strawberries.
18. Fold together avocado mixture and egg white mixture.
19. Cover the mixture with plastic cover and refrigerate for 60 minutes.
20. For making Stir fried Asparagus Medley – heat a wok.
21. Add in asparagus in the wok and stir for few minutes.
22. Add in peppers and onions, combine well.
23. Sprinkle salt, freshly ground pepper and basil. Toss well.

SERVING
24. In a martini glass add in the strawberries and scoop lime mousse over strawberries and garnish with fresh mint leaves.
25. Serve Stir fried Asparagus Medley in a casserole.
26. Serve Sablefish Siciliana hot in casserole.
