Lime Relish Baskets
|Marinated artichoke hearts||6 Ounce (1 Jar)|
|Canned whole kernel corn||16 Ounce, drained (1 Can, 12 Or 16 Ounce)|
|Canned pimientos||4 Ounce, drained and diced (1 Can Or Jar)|
|Grated onion||1 Tablespoon|
1 Make lime baskets this way: Mark a guideline lengthwise around the center of lime with the tip of a knife.
2 Then mark off a 1/2-inch-wide strip across the top for handle.
3 Cut out sections between marks and remove the remaining lime pulp from the bottom.
4 Wrap baskets in foil or transparent wrap and chill.
5 Dice enough of the lime pulp to measure 1/4 cup.
6 Place in a medium-size bowl. (Use remainder for punch or for flavoring the fruit cup.)
7 Drain liquid from artichoke hearts into the bowl with lime.
8 Chop artichokes and add with corn, pimientos, onion, sugar and salt; toss lightly to mix.
9 Chill at least 6 hours to season.
10 When ready to serve, trim a thin slice from the bottom of each lime basket, if needed, to make the basket stand flat.
11 Spoon the corn mixture into the baskets.
12 Serve as a side dish.
