Grilled Lime Caipirinha
|Superfine sugar||2 Tablespoon (Plus More For Dusting)|
|Lemon lime soda||1⁄2 Ounce|
1. Light a grill or preheat a grill pan over high heat. Trim the ends off the lime and slice the lime crosswise into 1/4 inch-thick rounds. Dust both sides of the lime wheels with superfine sugar and grill the lime slices over high heat, turning them once, until the sugar is lightly caramelized, about 20 seconds per side.
2. In a rocks glass, muddle the grilled lime wheelswith the 2 tablespoons of superfine sugar. Fill the glass with ice cubes, pour in the cachaga and top with the lemon-lime soda, if using. Stir the drink thoroughly and serve immediately.
