|Evaporated skimmed milk||1⁄2 Cup (8 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Grated lime peel||1⁄2 Teaspoon|
|Lime juice||2 Tablespoon|
Pour milk into shallow container; freeze till icy cold.
In a mixing bowl combine egg yolks, sugar, lime peel, 2 tablespoons lime juice, salt, and food coloring; set aside.
In another bowl beat the icy milk and egg whites with electric mixer till fluffy.
Add 2 tablespoons lime juice; beat till stiff peaks form (tips stand straight).
Beat in egg yolk mixture.
Pour into an 8x4x2-inch loaf pan; freeze firm.
With a fork, break mixture into chunks.
In chilled mixer bowl beat with electric mixer for 5 to 6 minutes or till smooth.
Return to loaf pan; freeze firm.
Scoop to serve; garnish with lime or lemon twists.
