Lettuce And Green Pea

Ingredients
  Iceberg lettuce head/Romaine / leaf lettuce 1 Large, shredded to make 8 cups
  Frozen green peas 10 Ounce (1 Package)
  Sliced green onion 1⁄2 Cup (8 tbs)
  Canned chicken broth 13 3⁄4 Ounce (1 Can)
  Light cream 1 1⁄2 Cup (24 tbs)
  Sugar 1 Teaspoon
  Salt 1 Teaspoon
  Nutmeg 1⁄8 Teaspoon
  Pepper 1 Dash
  Thin lemon slices 4
Directions

MAKING
1 In a 4-quart kettle, add shredded lettuce along with peas, green onion and chicken broth.
2 Cook over medium heat and bring to a boil.
3 Lower the heat and simmer, covered for 10 minutes or until the lettuce is soft.
4 Fit the blender container or food processor with the steel blade and put half the lettuce mixture and liquid in it.
5 Cover and blend for 1 minute at high speed.
6 Transfer the mixture to a bowl.
7 Repeat the process with the remaining lettuce mixture and liquid.
8 Transfer all the processed lettuce in the kettle.
9 Add in cream, sugar, salt, nutmeg and pepper to mixture in kettle.
10 Stirring constantly cook over medium heat, until well blended.

SERVING
11 Serve either hot ar refrigerate until chilled.
12 Garnish with lemon slices.
