Buttered New Peas and Lettuce
|Lettuce leaves/10-12 leaf lettuce leaves||6|
|Bibb lettuce leaves/12 leaf lettuce leaves||6|
|Peas||5 Cup (80 tbs)|
|Fresh shelled peas||5 Cup (80 tbs) (young)|
|Green onions||2 , chopped|
|Chicken stock/Water||1 Tablespoon|
Line a 2-quart saucepan with the lettuce leaves.
Add the peas.
Sprinkle on the green onions and add butter, stock, and sugar.
Cover and cook gently for 20-30 minutes until the peas are tender.
Add the salt.
Stir in lightly.
Remove from heat and cover again for another 2 minutes.
Serve in the cooking dish if possible.
