Take 1 lb.
shelled green peas and put them in a pan with a firm lettuce heart, cut in half, 1 good tblspn, butter, 1 tblspn, chopped onion, 1 teaspn.
sugar, 1 teaspn.
each chopped mint and finely chopped parsley.
Cook over a low heat, or over boiling water, till the peas are done.
Do not add any liquid.
When the peas are ready, remove the lettuce, season lightly with salt and pepper, and pour the contents of the pan into a serving dish.
