Warm Potatoes on Lettuce
|New potatoes||4 Medium (Unpeeled, New Variety)|
|Lettuce leaves||6 (Ruby Or Boston, Tender Variety)|
|Red pepper||1 , finely diced (Or Yellow)|
|Almond oil/Safflower oil||1⁄2 Cup (8 tbs)|
|Tarragon vinegar||1⁄4 Cup (4 tbs)|
|Minced red pepper||1 Tablespoon|
|Minced yellow peppers||1 Tablespoon|
1. Steam the potatoes until tender, about 10 minutes. Slice each potato into 5 or 6 pieces, keeping each potato separate.
2. Combine all the ingredients for the vinaigrette in a mixing bowl.
3. Arrange lettuce on individual serving plates and put the potatoes and the diced pepper on top. Spoon the vinaigrette over the salad and serve.
