Warm Potatoes on Lettuce

Ingredients
  New potatoes 4 Medium (Unpeeled, New Variety)
  Lettuce leaves 6 (Ruby Or Boston, Tender Variety)
  Red pepper 1 , finely diced (Or Yellow)
For vinaigrette
  Almond oil/Safflower oil 1⁄2 Cup (8 tbs)
  Tarragon vinegar 1⁄4 Cup (4 tbs)
  Minced red pepper 1 Tablespoon
  Minced yellow peppers 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

1. Steam the potatoes until tender, about 10 minutes. Slice each potato into 5 or 6 pieces, keeping each potato separate.
2. Combine all the ingredients for the vinaigrette in a mixing bowl.
3. Arrange lettuce on individual serving plates and put the potatoes and the diced pepper on top. Spoon the vinaigrette over the salad and serve.
