Green Peas With Lettuce

Ingredients
  Frozen green peas/2 pounds fresh green peas 1 Pound
  Margarine 1 Tablespoon (Use Acceptable Brand)
  Onion 1 Small, finely chopped
  Salt 1⁄4 Teaspoon
  Freshly ground black pepper 1⁄2 Teaspoon (Or Use According To Taste)
  Homemade chicken stock 2 Tablespoon
  Romaine lettuce head/Iceberg lettuce head 1⁄2 , rinsed, dried and finely shredded
  Chopped fresh thyme/1/2 teaspoon dried thyme 1⁄2 Tablespoon, chopped
  Minced fresh parsley 1 Tablespoon
Directions

Shell peas if fresh, defrost if frozen.
In a nonstick skillet, heat margarine over medium-high heat.
Saute onion until transparent, 2 to 3 minutes.
Add peas, salt, pepper and stock.
Cover and cook 1 minute.
Top peas with lettuce.
Cover tightly and cook over low heat 4 to 8 minutes, or until peas are tender.
Sprinkle with herbs; toss and serve hot.
