Minted Lettuce & Peas

Ingredients
  Red leaf lettuce head 1 Small, separated
  Butter/Margarine 2 Tablespoon
  Frozen tiny peas 10 Ounce, thawed (1 Package)
  Chopped fresh mint/1 1/2 tablespoons dry mint 1⁄4 Cup (4 tbs)
  Grated lemon peel 2 Teaspoon, grated
  Salt To Taste
  Pepper To Taste
Directions

Set aside 6 large lettuce leaves; cut remaining lettuce into thin strips.
Melt butter in a wide frying pan over medium-high heat.
Add peas and lettuce strips; cook, stirring, until lettuce is wilted about 2 minutes.
Stir in mint and lemon peel.
Season to taste with salt and pepper.
To serve, place a whole lettuce leaf on each of 6 plates.
Spoon pea mixture equally into center of each leaf.
