Minted Lettuce & Peas
|Red leaf lettuce head||1 Small, separated|
|Frozen tiny peas||10 Ounce, thawed (1 Package)|
|Chopped fresh mint/1 1/2 tablespoons dry mint||1⁄4 Cup (4 tbs)|
|Grated lemon peel||2 Teaspoon, grated|
Set aside 6 large lettuce leaves; cut remaining lettuce into thin strips.
Melt butter in a wide frying pan over medium-high heat.
Add peas and lettuce strips; cook, stirring, until lettuce is wilted about 2 minutes.
Stir in mint and lemon peel.
Season to taste with salt and pepper.
To serve, place a whole lettuce leaf on each of 6 plates.
Spoon pea mixture equally into center of each leaf.
