Thai Beef On Lettuce Leaves

  Lime juice 3 Tablespoon
  Sugar 1 Tablespoon
  Asian fish sauce 2 Teaspoon (Nam Pla)
  Grated peeled ginger 1 Teaspoon
  Thai red curry paste 1⁄4 Teaspoon
  Thinly sliced lean roast beef 3⁄4 Pound, cut into thin strips
  Carrot 1 , grated
  Red bell pepper 1⁄2 , seeded, thinly sliced
  Red onion 1⁄2 Small, thinly sliced
  Cucumber 1⁄2 , peeled, seeded, and chopped
  Chopped cilantro 1⁄4 Cup (4 tbs)
  Boston lettuce leaves 4

1 Combine the lime juice, sugar, fish sauce, ginger, and curry paste in a small bowl; mix well to dissolve the sugar.
2 Combine the roast beef, carrot, bell pepper, red onion, cucumber, and cilantro in a large bowl. Add the lime juice mixture and toss well to combine.
