Pineapple Wilted Lettuce
|Butter/Red leaf lettuce||1 Medium|
|Pineapple chunks||2⁄3 Cup (10.67 tbs) (Fresh / Canned And Drained)|
|Bacon strips||4 , cut into 1/2 inch pieces|
|Wine vinegar||1⁄4 Cup (4 tbs)|
Break lettuce coarsely into a salad bowl; add pineapple chunks.
In a small frying pan over medium heat, cook bacon until crisp.
Add vinegar, water, and salt to bacon and drippings.
Bring to a boil, stirring constantly for about 2 minutes until dressing is slightly reduced.
Pour hot dressing over lettuce and pineapple.
Cover bowl and let stand for about 30 seconds; then toss salad lightly.
