Cooked Cos Lettuce
|Cos lettuce leaves||8|
|Chicken stock||1⁄4 Pint (U.S. 5/8 Cup)|
|Peanut oil||1 Tablespoon|
|Soy sauce||1⁄2 Cup (8 tbs)|
|Monosodium glutamate||1 Pinch (Ve-Tsin)|
Pick over and wash the lettuce leaves.
Bring the stock, 1 dessertspoon oil, few drops soy sauce, salt and Ve-Tsin to the boil.
Drop the lettuce leaves into the liquid and cook for 1/2-1 minute.
Place on a suitable platter.
Mix together a few drops of soy sauce and peanut oil and spoon them over the lettuce.
