Red Lentil Salad With Red Peppers And Cucumbers

Ingredients
  Red lentils 1 Cup (16 tbs)
  Water 2 1⁄2 Cup (40 tbs)
  Red bell pepper 1 , diced
  Parsley 1 Bunch (100 gm), chopped
  English cucumber/2 pickling cucumbers 1⁄2 , quartered lengthwise and sliced
  Watercress sprigs 3 , stemmed
  Scallions/1/2 sweet red onion, minced 4 , sliced
  Olive oil 2 Tablespoon
  Cider vinegar 2 Tablespoon
  Cayenne pepper 1 Pinch
  Salt To Taste
  Black pepper To Taste
Directions

MAKING
1. Rinse the lentils well.
2. In a cooking pot, boil water and add the lentils.
3. Cover the pot and reduce heat. Simmer 4 minutes. Do not overcook.
4. Pour cooked lentils in a strainer and rinse well. Remove all excess water from the water.
5. In a bowl place the lentils.
6. Add the remaining ingredients and toss well.

SERVING
7. Serve Red Lentil Salad With Red Peppers And Cucumbers at temperature.
