Lentil And Leek Burritos

Ingredients
  Leeks 2
  Dried oregano 3⁄4 Teaspoon
  Chili powder 3⁄4 Teaspoon
  Paprika 1⁄2 Teaspoon
  Hot pepper sauce 1⁄2 Teaspoon
  Ground cumin 1⁄4 Teaspoon
  Cooked lentils 2 Cup (32 tbs)
  Flour tortillas 4
  Low fat cheese 1⁄4 Cup (4 tbs), shredded
  Canola oil 1 Tablespoon
  Tomatoes 1 , quartered
  Lime juice 1 Tablespoon
  Scallions 2 , finely chopped
Directions

GETTING READY
1) In a skillet, heat oil and sauté leeks for 5 to 6 minutes or until the leeks are tender.
2) Add in dried oregano, chilli powder, paprika cumin and pepper sauce, stirring constantly for 3 to 4 minutes
3) Mix in the lentils combine well.
4) Divide the mixture among 4 equal parts.
MAKING
5) Arrange the tortillas on the working table and place the mixture in middle of each.
6) Sprinkle with the cheese and roll up the tortillas to enclose the filling.
7) In a clean the skillet, heat oil add the burritos, seam-side down, and heat until the bottoms are just brown, about 2 minutes.

FINALIZING
8) In a food processor or blender, combine the tomatoes and lime juice.
9) Process briefly until coarsely chopped.
10) Turn the burritos and cover with the tomatoes.
11) Partially cover the pan and simmer until the tomatoes are heated through, about 4 minutes.

SERVING
12) Serve hot sprinkled with the scallions.
