Lentil Cucumber Salad With Lemon And Mustard Dressing

Ingredients
  Cooked lentils 2 Cup (32 tbs)
  Chopped red bell pepper 1⁄2 Cup (8 tbs)
  Peeled seeded chopped cucumber 1⁄2 Cup (8 tbs)
  Finely chopped red onion 1⁄3 Cup (5.33 tbs)
  Chopped pitted kalamata olives 1⁄4 Cup (4 tbs)
  Extra virgin olive oil 1⁄4 Cup (4 tbs)
  Fresh lemon juice 3 Tablespoon
  Dijon mustard 1 Teaspoon
  Finely grated lemon peel 1 Teaspoon
  Feta cheese 2 Ounce, crumbled
  Chopped fresh mint 1⁄4 Cup (4 tbs)
Directions

Cook lentils according to package directions until tender. Let cool then transfer to a large bowl. Add red bell pepper, cucumber, onion and olives to bowl.

In a small bowl whisk olive oil, lemon juice, mustard and lemon peel together then pour over lentil mixture. Toss to coat. Add feta cheese and mint to bowl, toss again and serve.
