South American Lentils
|Dry lentils||1 Pound|
|Bacon||1⁄2 Pound, diced|
|Onion||1 Large, chopped|
|Beef||3 Pound, ground|
Soak the lentils in water to cover for several hours or overnight.
Saute the bacon slightly, then add the onion, beef, lentils and enough water to barely cover mixture.
Simmer, uncovered, until lentils are tender and mixture is mushy.
Add salt and serve hot.
