Louisville Lentils

Ingredients
  Olive oil 1 Teaspoon
  Carrots 2 , pared and diced
  Stalk celery 1 , diced
  Dry shallots 4 , peeled and halved
  Onion 1 , chopped
  Dried lentils 1 1⁄2 Cup (24 tbs), washed and drained
  Cajun seasoning 1 Teaspoon (For Beans And Rice)
  Cayenne pepper 1⁄4 Teaspoon
  Chorizo sausage 1 , sliced
Directions

Heat oil in saute pan over medium heat. Add vegetables and cook 6 minutes over low heat.
Add lentils and spices. Mix and cover with water. Bring to boil and partly cover. Cook 1 hour 15 minutes over low heat.
Add sausage. Season with salt and pepper. Partly cover and continue cooking 15 minutes.
