|Carrots||2 , pared and diced|
|Stalk celery||1 , diced|
|Dry shallots||4 , peeled and halved|
|Onion||1 , chopped|
|Dried lentils||1 1⁄2 Cup (24 tbs), washed and drained|
|Cajun seasoning||1 Teaspoon (For Beans And Rice)|
|Cayenne pepper||1⁄4 Teaspoon|
|Chorizo sausage||1 , sliced|
Heat oil in saute pan over medium heat. Add vegetables and cook 6 minutes over low heat.
Add lentils and spices. Mix and cover with water. Bring to boil and partly cover. Cook 1 hour 15 minutes over low heat.
Add sausage. Season with salt and pepper. Partly cover and continue cooking 15 minutes.
