Delicious Lemon Dessert

This delicious lemon dessert is prepared with gelatin and lemon rind and lemon juice for flavor. Beten together with eggs, sugar and cracker crumbs, the delicious lemon dessert is best served chilled.
Ingredients
  Plain gelatin 1 1⁄2 Teaspoon
  Cold water 1⁄2 Cup (8 tbs)
  Egg yolks 4
  Sugar 2⁄3 Cup (10.67 tbs)
  Lemon 1 , grated rind and juiced
  Egg whites 4
  Sugar 1⁄4 Cup (4 tbs)
  Graham cracker crumbs 1⁄4 Cup (4 tbs)
Directions

Soften gelatine in cold water.
Stir together egg yolks, sugar, lemon rind and juice.
Cook over hot water until thick.
Remove.
Add gelatine.
Beat egg whites with the 1/4 cup sugar and fold into first mixture.
Cover bottom of one 8 inch square cake pan with graham cracker crumbs and pour in mixture.
Chill well overnight if possible.
