Fresh Lemon Cookies is a recipe that can be prepared in nearly no time. Try this baked snack cookie; I am sure you will have a huge fan following for this one!
Ingredients
  All purpose flour 1 Cup (16 tbs)
  Baking powder 2 Teaspoon
  Salt 1⁄8 Teaspoon
  Margarine 2 Tablespoon
  Sugar 1⁄2 Cup (8 tbs)
  Egg 1
  Lemon rind 1 Tablespoon
  Lemon juice 2 Tablespoon
Directions

Combine flour, baking powder, and salt in a small bowl; set aside.
Cream margarine in a medium bowl until light and fluffy.
Gradually add sugar, bearing well.
Add egg, lemon rind, and lemon juice, beat well.
Add flour mixture, and stir until blended.
Roll dough and cut with cookie cutter and lightly coated with cooking spray.
Bake at 350°F for 10 minutes or until edges are lightly browned.
Cool slightly on cookie sheets; remove to wire racks, and cool completely.
