Lemon Sponge Squares

  Flour 1 Cup (16 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Butter/Margarine 1⁄2 Cup (8 tbs)
  Eggs 2
  Sugar 1 Cup (16 tbs)
  Lemon 1
  Lemon juice 1⁄4 Cup (4 tbs)
  Flour 2 Tablespoon
  Baking powder 1⁄2 Teaspoon
  Powdered sugar 1 Tablespoon

Blend 1 cup flour, 1/4 cup sugar, and butter well. Press firmly into square pan and bake until lightly browned (15 to 20 minutes). Beat together eggs, 1 cup sugar, rind, and lemon juice. Mix 2 tablespoons flour and baking powder; add to egg mixture. Pour over the baked crust; bake another 20 minutes, or until lightly browned and top seems set when touched with finger. Sprinkle a light dusting of powdered sugar on top. Cool, then cut into squares.
