Lemon Refrigerator Cookies
|Flour||2 Cup (32 tbs)|
|Baking powder||1 Teaspoon|
|Butter||1⁄2 Cup (8 tbs)|
|Grated rind of lemons||2 Teaspoon|
|Ground cinnamon||1⁄2 Teaspoon|
Sift flour and baking powder into a bowl.
Rub in butter till mixture resembles fine bread crumbs.
Add sugar, lemon rind and cinnamon, then beat the egg and mix well into the dough.
Shape the mixture into one or two sausage shapes about 1 1/2 inches in diameter.
Wrap in foil, twisting the ends to seal.
Preheat the oven to 375°.
Remove dough from foil wrapper and thinly slice.
Place slices on greased baking sheets.
Bake for 10-12 minutes, till golden.
Cool on wire rack.
