Lemon Icebox Cookies

Ingredients
  Butter 1 Cup (16 tbs), softened
  Granulated sugar 1 Cup (16 tbs)
  Firmly packed light brown sugar 1 Cup (16 tbs)
  Eggs 2 Large
  Grated lemon rind 1 Teaspoon
  Lemon juice 1 Tablespoon
  All purpose flour 3 1⁄2 Cup (56 tbs)
  Baking soda 1 Teaspoon
  Salt 1⁄2 Teaspoon
Directions

GETTING READY
1. Dry the cherries by patting them on paper towels and keep aside.
2. Preheat the oven to 400 degree F before baking.
3. Lightly grease cookie sheets with butter

MAKING
4. In a large mixing bowl, place the butter and beat with an electric mixer until soft.
5. Gradually add sugar, beating until the mixture is light and creamy.
6. Break in the egg one at a time and beat until well blended.
7. Stir in the lemon rind and juice.
8. Sift flour, baking powder and salt into a bowl then add to the creamed mixture in batches, beating at low speed to make dough.
9. Divide the dough into 3 equal portions and shape each portion into 12-inch rolls
10. Tightly wrap each log in wax paper and refrigerate or freeze until firm or until required.

FINALIZING
11. Remove logs from the refrigerator and slice each into 1/2 inch thick slices, using a sharp serrated knife.
12. Arrange the slices on cookie sheets, leaving 2 inch space between each.
13. Bake them in the preheated oven for 8 to 10 minutes
14. Remove from oven and cool cookies slightly on baking sheets then slide them to on a wire rack to cool.

SERVING
15. These cookies simply melt in your mouth when served warm with tea or coffee.
16. They make wonderful treats at tea parties or you can pack them in a box and include them in your Christmas hampers.

TIPS
Store baked cookies in a wax paper lined air tight container, in a cool dry place.
