These sweet and tangy lemon crunchies brim with the goodness of oats and coconut. Sample this simple lemon crunchy recipe; you'll for sure love it!
Ingredients
  Oats 1 Cup (16 tbs)
  Flour 1 Cup (16 tbs)
  Dessicated coconut 3⁄4 Cup (12 tbs)
  Sugar 1 Cup (16 tbs)
  Marmalade 1 Tablespoon
  Butter 1⁄4 Pound
  Boiling water 1 Tablespoon
  Soda bicarbonate 1⁄2 Teaspoon
  Lemon 1 (rind grated)
Directions

Sieve flour, salt and baking powder.
Rub ii the fat.
Stir in the sugar and marmalade and Beat butter and marmalade.
Add Bi-carb dissolved in boiling water.
Allow it to froth Knead in other ingredients, adding grated rim last of all.
Press into a square pan, make into squares and bake in a moderate oven about 2'.
