Apple And Lemon Dessert

Ingredients
  Apple puree 1⁄2 Pint (250 Milliliter)
  Caster sugar 2 Tablespoon
  Grated lemon rind 1 Teaspoon
  Eggs 2 , separated
  Double cream 1⁄4 Pint (125 Milliliter)
Directions

MAKING
1) In a double boiler put the apple puree, sugar and lemon rind and simmer till sugar melts.
2) Stir egg yolks and cook the mixture till thick.
3) Keep aside in a cold place.
4) Whisk egg whites till firm.
5) Whisk cream till thick.
6) In the apple mixture fold both.

SERVING
7) Serve garnished with small apple pieces or lemon rind.

TIPS
Before freezing, take it out in a serving dish and freeze till firm. Unmold dipping the dish in hot water, put in a plastic bag and freeze again. Thaw for 6 hours in the refrigerator.
