Lemon Zucchini

Ingredients
  Unpeeled zucchini 5 , sliced
  Water 3⁄4 Cup (12 tbs)
  Finely chopped onion 2 Tablespoon
  Chopped fresh parsley 1⁄3 Cup (5.33 tbs)
  Low sodium corn oil margarine 1 Tablespoon
  Grated lemon peel 1⁄4 Teaspoon
  Lemon juice 1 Tablespoon
Directions

1. Cook zucchini in water 8-10 minutes or until tender. Drain.
2. While zucchini is cooking, briefly saute onion and parsley in margarine. Add lemon peel and lemon juice.
3. Heat through and pour over zucchini.
