Lemon Marinated Mushrooms
|Fresh mushrooms||1 Pound (60 small ones)|
|Fresh lemon juice||1⁄2 Cup (8 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Minced fresh parsley||2 Tablespoon|
|Dijon mustard||2 Tablespoon|
|Low sodium worcestershire sauce||1 Tablespoon|
|Dried whole oregano||1 Teaspoon|
|Olive oil||1 Teaspoon|
|Garlic powder||1⁄4 Teaspoon|
|Ground red pepper||1⁄8 Teaspoon|
Clean mushrooms with damp paper towels.
Place in a 13- x 9- x 2-inch baking dish.
Combine lemon juice and remaining ingredients in a small bowl; stir well.
Pour over mushrooms, stirring to coat.
Cover and marinate in refrigerator at least 8 hours, stirring occasionally.
Drain well before serving.
