Citron Preserves

  Pared citron melon 2 Quart, diced (5 1/2 Pound Melon)
  Granulated sugar 5 Cup (80 tbs)
  Water 4 Cup (64 tbs)
  Lemon juice 3 Tablespoon
  Grated lemon rind 1 Tablespoon

Cut the melon in quarters.
Pare and dice it, removing all the seeds.
Cook the sugar and water together for 5 min.; add the diced melon, and cook until tender and transparent.
Add the lemon juice and rind, and cook 20 min longer.
Turn into hot sterilized preserve jars, and seal.
2 tablesp diced crystallized ginger may be added.
