Lemon Barbecued Shrimp
|Large fresh shrimp||2 1⁄2 Pound, peeled and deveined|
|Fresh lemon juice||1⁄2 Cup (8 tbs)|
|Reduced calorie italian salad dressing||1⁄3 Cup (5.33 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Lite soy sauce||1⁄4 Cup (4 tbs)|
|Fresh parsley||3 Tablespoon, minced|
|Onion||3 Tablespoon, minced|
|Garlic||1 Clove (5 gm), crushed|
|Pepper||1⁄2 Teaspoon, freshly ground|
In a large shallow dish arrange shrimp.
In a jar combine lemon juice, salad dressing, water, soy sauce, parsley, onion, garlic and pepper; cover tightly.
Shake jar vigorously.
Pour over shrimp; cover.
Marinate for 4 hours.
Drain, reserving marinade.
Onto skewers thread shrimp.
Preheat broiler or grill.
On broiler pan or grill arrange skewers.
Cook 5 to 6 inches from medium heat source for 3 to 4 minutes on each side, basting frequently with reserved marinade.
