Lemon Tarragon Chicken
|Butter||80 Gram, softened|
|Lemon rind||1 Tablespoon, finely grated|
|Lemon juice||1 Tablespoon|
|Chopped tarragon leaves||1 Tablespoon|
|Brown sugar||1 Tablespoon|
|Chicken breast fillets/Bone||1 Kilogram|
|Lemon||140 Gram, sliced|
|Unpeeled garlic||8 Clove (40 gm)|
Combine butter, rind, juice, tarragon and sugar in small bowl.
Remove and discard skin from chicken; make 3 deep diagonal cuts across each piece.
Press butter mixture into cuts; spread remainder all over chicken.
Place chicken in shallow baking dish, in single layer, with lemon and garlic.
Bake, uncovered, in very hot oven about 20 minutes or until browned lightly and cooked through.
