Gailu Sesame And Lemon
|Aubergines/2 large ones||3 Medium (dark purple)|
|Tahini||2 Tablespoon (sesame paste)|
|Garlic paste||2 Teaspoon|
|Lemon/2 lime juice||1 Large, juiced|
Pierce the aubergines in a few places with the point of a knife and turn them directly over a flame or under the grill until their skins are black and blistered and the flesh feels soft.
Alternatively, roast them in the oven at 200° C for approximately 40 minutes, depending on the size.
Peel them and squeeze their juice out in a colander.
Mash the flesh with a fork or puree it in a blender adding the rest of the ingredients gradually and tasting all the time.
Pour into a bowl and garnish with the olive oil, parsley and olives.
I often add half a teaspoon of freshly roasted, ground cumin and a chopped green chilli, to add a bit of excitement
