Sweet Tart Lemon Squares
|Sweetened condensed milk||14 Ounce (1 Can)|
|Lemon juice||1⁄2 Cup (8 tbs)|
|Grated lemon rind||1 Teaspoon|
|Graham cracker crumbs||1 1⁄2 Cup (24 tbs)|
|Firmly packed brown sugar||1⁄3 Cup (5.33 tbs)|
|Butter||1 Tablespoon, melted|
In small mixing bowl, stir together milk, lemon juice and lemon rind until thick and smooth.
Combine graham cracker crumbs, sugar and butter; blend well.
Firmly press 1/2 of crumb mixture into bottom of 8-inch square glass baking dish.
Spread lemon mixture evenly over crumbs.
Sprinkle with remaining crumbs.
Microwave at HIGH (10) 5 to 7 minutes.
Cool and cut into squares.
