Lemon Ginger Cookies
|All purpose flour||3 Cup (48 tbs)|
|Baking powder||1 Teaspoon|
|Butter/Margarine||3⁄4 Cup (12 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Egg||1 , beaten|
|Freshly squeezed lemon juice||1 Tablespoon|
|Grated lemon peel||2 Teaspoon|
|Finely chopped candied ginger||1⁄3 Cup (5.33 tbs)|
Combine flour, baking powder and salt.
Cream butter and sugar until light and fluffy.
Stir In egg, lemon juice, lemon peel and ginger.
Add dry ingredients to egg mixture.
Chill the dough slightly.
Roll about 1/8 inch thick on lightly floured surface.
Cut with floured cutters into desired shapes.
Place on greased cookie sheets and bake at 425° for 6 to 8 minutes, or until lightly browned.
