Microwaved Lemon Squares
|Butter||1⁄2 Cup (8 tbs)|
|Flour||1 Cup (16 tbs)|
|Powdered sugar||1⁄4 Cup (4 tbs)|
|Sugar||1 Cup (16 tbs)|
|Lemon juice||3 Tablespoon|
|Lemon flavoring||1⁄4 Teaspoon|
|Baking powder||1⁄2 Teaspoon|
In 1 cup glass measure, melt butter (high) 45 seconds.
Stir into flour, salt and powdered sugar in 8-inch square glass dish.
Press evenly in dish.
Microwave (medium-high 70%) 3-4 minutes, rotating 1/4 turn halfway through cooking, until mixture is bubbly on top.
Combine remaining ingredients; pour over crust.
Microwave (medium-high 70%), 5-7 minutes, rotating 1/4 turn once, until lemon becomes fairly firm.
Sprinkle with sifted powdered sugar.
