In a small bowl, beat egg yolks.
In a medium-size saucepan, mix together egg yolks and milk.
Stir in gelatin, and set aside for about 5 minutes to soften.
Add honey, and cook over low heat, stirring constantly, for 5 minutes.
Remove from heat, and mix in lemon extract.
Pour into a large bowl, and chill until thick but not set.
In a medium-size bowl, beat egg whites until stiff peaks form.
Fold into lemon mixture.
Spoon into 6 dessert dishes, and chill until set.
Decorate with frozen grapes, if desired.
