Buttery Lemon Squares
|Butter||1 Cup (16 tbs)|
|Powdered sugar||1⁄2 Cup (8 tbs), unsifted|
|Flour||2 1⁄3 Cup (37.33 tbs), divided|
|Eggs||4 , beaten|
|Sugar||2 Cup (32 tbs)|
|Lemon juice||6 Tablespoon|
|Baking powder||1 Teaspoon|
Cream butter and powdered sugar until fluffy.
Add 2 cups of the flour beating until well blended.
Spread into well-greased 9x13 pan.
Bake at 350° about 20 minutes.
Beat eggs until light, gradually add sugar, beating until thick.
Add lemon juice and remaining 1/3 cup flour and baking powder.
Pour over hot baked crust.
Bake 15-20 minutes more.
Remove from oven and sprinkle with powdered sugar.
Cut into squares while still warm.
Use a 9" square pan for 1/2 recipe.
