  Raw turkey 1 Pound
  Tomato sauce 15 Ounce (With Tomato Bits)
  Tomato sauce 24 Ounce (No Salt Added)
  Chopped green pepper 1⁄3 Cup (5.33 tbs)
  Chopped onion 1⁄3 Cup (5.33 tbs)
  Garlic 1 Clove (5 gm), crushed
  Bay leaf 1
  Italian seasoning 1 1⁄4 Teaspoon
  Dried whole oregano 1⁄2 Teaspoon
  Fennel seeds 1⁄4 Teaspoon
  Red pepper 1⁄8 Teaspoon
  Nutmeg 1 Dash
  1% low-fat cottage cheese 12 Ounce
  Frozen spinach 10 Ounce, thawed and pressed and dry
  Grated parmesan cheese 2 Tablespoon
  Wonton wrappers 18
  Mozzarella cheese 4 Ounce, shredded (Part Skim)

Cook turkey in skillet over medium heat until brown, drain well on paper towels.
Combine turkey, tomato sauce, green pepper, onion, and seasonings in a large saucepan, cover and cook over low heat 30 minutes, stirring occasionally.
Remove bay leaf from sauce.
Combine cottage cheese, spinach, and Parmesan cheese, set aside.
Coat a 12 x 8 x 2-inch baking dish with cooking spray.
Spoon 1 cup turkey sauce into baking dish.
Top with 6 wonton wrappers laid in a single layer, 1 cup spinach mixture, and 1 1/2 cups turkey sauce.
Repeat layers twice, ending with sauce mixture.
Bake at 350° for 40 minutes or until thoroughly heated.
Remove from oven, top with mozzarella cheese, and bake an additional 5 minutes.
