Spinach Lasagne

Ingredients
  Lasagne noodles 12 Ounce
  Water 4 Quart (boiling)
  Cooking oil 1 Tablespoon (optional)
  Salt 1 Tablespoon
For tomato mushroom sauce
  Butter/Margarine 2 Tablespoon
  Onion 1 Cup (16 tbs), chopped
  Fresh mushrooms 2 Cup (32 tbs), sliced
  Tomato sauce 15 Ounce
  Tomato paste 5 1⁄2 Ounce
  Oregano 1 Teaspoon
  Salt 1 Teaspoon
  Granulated sugar 1 Teaspoon
  Basil 1⁄4 Teaspoon
For spinach layer
  Cottage cheese 2 Cup (32 tbs)
  Egg 1
  Frozen chopped spinach 10 Ounce, thawed
  Salt To Taste (sprinkle)
  Pepper To Taste (sprinkle)
  Nutmeg 1⁄2 Teaspoon (light sprinkle)
  Parmesan cheese 1⁄2 Cup (8 tbs), grated
  Mozzarella cheese 2 Cup (32 tbs), grated
Directions

GETTING READY
1) Preheat oven moderate to 350°F (180°C).

MAKING
2) In an uncovered Dutch oven boil water. Cook noodles, cooking oil and salt for about 14 to 16 minutes.
3) Drain noodles from water.
4) To prepare tomato mushroom sauce, in a large frying pan melt butter.
5) Mix onion and sauté until soft.
6) Add mushrooms and saute for 3 to 5 minutes.
7) Stir in the next 6 ingredients and mix thoroughly.
8) Simmer uncovered for 10 to 15 minutes.
9) To prepare the spinach layer, in a bowl mix together cottage cheese and egg.
10) Add spinach, a sprinkle of salt, pepper and nutmeg.
11) Cover the top with a greased foil.
12) Bake in for about 50 to 60 minutes.
13) Let stand for 10 minutes before cutting.

SERVING
14) Cut into 12 pieces and serve.
