Spinach Lasagna

  Marinara sauce 5 Cup (80 tbs)
  Lasagna noodles 8 Ounce
  Frozen chopped spinach 20 Ounce, squeezed (2 Packages)
  Ricotta cheese 1 Pint
  Parmesan cheese 4 Tablespoon
  Garlic powder 1 Teaspoon
  Ground black pepper 1⁄2 Teaspoon
  Shredded part skim mozzarella cheese 4 Ounce

1. Preheat the oven to 350°F. Lightly oil a 13" x 9" x 3" baking dish. While the Marinara Sauce is cooking, bring a stockpot of unsalted water to a boil, add the noodles, and cook for 10 minutes or until almost tender. Drain, rinse, and dram again.
2. Meanwhile, in a large bowl mix the spinach, ricotta cheese, 2 tablespoons of the Parmesan cheese, the garlic powder, nutmeg, and pepper. Cover the bottom of the baking dish with 1 cup of the Marinara Sauce. Layer 1/3 of the noodles over the sauce with edges overlapping, then spread on 1/2 of the spinach mixture, and 1 1/3 cups of the sauce. Repeat this layering process 2 more times.
3. Sprinkle with the mozzarella cheese and the remaining 2 tablespoons of Parmesan. Cover and bake for 30 minutes or until golden brown and heated through. Let stand for 10 minutes before serving.
