Fricassee Of Baby Lamb

Ingredients
  Fresh thyme sprigs 3 , crumbled
  Mild curry powder 2 Tablespoon
  Allspice 1 Teaspoon
  Spring lamb 2 Pound, cut into 8 equal portions
  Salt To Taste
  Pepper To Taste
  Olive oil 3 Tablespoon
  Shallots 3 Large, finely sliced
  Ripe tomatoes 14 Ounce, rinsed, seeded and quartered (Small Sized)
  Vinegar 2 Tablespoon
  Diced cucumber 7
  Mild mustard 3 Tablespoon
  Chopped fresh mint 1 Tablespoon
Directions

Heat a browning dish in the microwave oven for 6-8 minutes on HIGH, following the manufacturer's instructions.
Mix the crumbled thyme, curry powder and allspice on a plate and roll the lamb pieces in the mixture.
Season with salt and pepper.
When the browning dish is hot, pour in the olive oil and add the shallots, stirring vigorously.
Add the pieces of meat, leaving for 30 seconds on one side, then turning.
Arrange the tomato quarters round the meat and pour over the vinegar.
Cover and microwave on HIGH for 10 minutes.
Add the diced cucumber to the browning dish.
Cover and microwave on HIGH for a further 6 minutes.
Leave to stand for 5 minutes.
Put the lamb in a serving dish.
Stir the mustard into the vegetables and arrange around the meat.
