Leg of Lamb (Greek-Style)
|Garlic||2 Clove (10 gm), crushed|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Coarsely ground black pepper||1⁄4 Teaspoon|
|Ground anise seed||1⁄4 Teaspoon (Or Crushed)|
|Plain yogurt||8 Ounce (1 Container)|
|Leg lamb||7 Pound, boned, trimmed and butterflied (1 In Number)|
Combine all ingredients except lamb in large, shallow glass baking pan.
Add idmbto marinade; turn to coat evenly.
Marinate, covered, in refrigerator several hours or overnight.
Preheat oven to 500°.
Place lamb on rack in shallow baking pan.
Roast 30 minutes.
Baste with marinade.
Turn and roast 15 minutes.
Thick portions will be slightly pink.
To serve, slice.
